Eggplant is seriously one of my favorite foods. The trick is to cut them into thin slices and salt them. Let that sit about 15-20 minutes and then squeeze the water out of the eggplant. That’s the way you can get rid of the bitter taste. I also know some people that cube the eggplant and put the cubes in cold salted water for about half an hour. I used to dip them in flour and egg then fry. To comply with protocol you can dip them in egg or egg white and air fry or fry them in olive oil.
