I can’t remember what everyone adds to the pancake mix to make fluffier pancakes? Is it just an egg?

My coach just told me yesterday to add an egg to make two. I'm not sure if it'll make them fluffy

I add 2 1/2 tbsp egg white and 1 tsp baking powder, 1 tsp Splenda, 1/2 tsp cinnamon, 1 tbsp WF syrup, 1/2-1 tsp vanilla, I mix that then add in 1 cup shredded zucchini. I prefer to make them into mini waffles, if I’m short on time though I’ll do pancakes.

Cinnamon, baking powder and sometimes vanilla extract. I see others suggesting an egg. I may try that next time
