@encampment sorry to hear. I’ve never had an issue for the past 12 years. Again, I’m paying and kinda hiring the restaurant and staff for a bit. Everyone that walks in the door does the same. I go out to eat to be catered to so I expect the place to have 8 Oz (I do 8, corporate can do 6) of something that walks on the land or swims in some body of water, 2 cups of basic veggies and some salad greens. If the restaurant cannot produce that, get out of the business and try something else.

Real OG Mexican food restaurants won’t let you do this. It’s a cultural sin, I think  (Actually it’s because they stew the tortilla crisps into the mix before you order it)

Our restaurant has Grilled chicken and mixed grilled veggies. I have them leave off the rice and cheese sauce and ask for extra veggies.

I take Dorados along so I can eat the salsa! Grilled chicken / steak with lettuce and tomato, I have them add grilled peppers and mushrooms as well! Plus a side of pickled jalapeños as a topper!

Fish or shrimp ceviche (it’s marinated in lime juice) with pico de gallo. It’s quite often on the appetizer menu. State you don’t want tortilla chips or cracker with it and eat it with a fork. Another thing that’s sometimes on the appetizer menu is jicama, which is usually sprinkled with lime juice and chili powder.

Fajitas. Extra lettuce if they have it. Sometimes they’ll substitute things for tortillas or cheese. Be sure to ask! Get those 4 cups in. Make sure they don’t brine the meat in sugar (ask the kitchen). Also, extra peppers. Wash it down with a Topo Chico.

Camarongos- it's just grilled shrimp and mushrooms. I eat it over a side of shredded lettuce with a bit of pico on the top. Yum!
