You can cook it several ways. Begin by peeling the wax coat and outer layer off (that's the hardest part). Then you can cut it up as you wish. Some make "fries" out of it. I chop up like potatoes and boil until soft. Mash and add WF maple walnut syrup. I call it our sweet potatoes. Delicious!

Fries. Mash. Use in soups and stews like you would potatoes.

I really enjoyed it raw. Sliced it up and kept it in my fridge for before supper!

I threw it in the beef stew I just made and you feel like you have potatoes. I also cut into smaller cubes and threw it in the air fryer with different seasonings to go with, y burger

Fries or chips made in the air fryer or in the oven! You can season them differently every time!

Dice, boil, pan fry in a little oil with spices. Add dried onion, like a hash. Some crispy, some soft

I just tried it for the first time last week. I had expected it to be firm (like a jicama) but not hard. I got my crinkle cutter stuck. It is a dense veggie! If you microwave it for a few minutes, after removing the wax outer layer , it makes cutting much easier.

Buy some ziploc steamer bags, peel and cube it and toss in the bag, toss in olive oil and preferred seasoning, and about 3 Tbsp of chicken broth. Instructions on bags. microwave for 4 min a half bag full, 7 min for full bag. AMAZING!
