Can we use canned Rotel tomatoes. if so, can we have 2 cups?

As tomatoes they count toward your four cups. of occasional veggies for the week but yes you can have them

Weigh them out, 6. 3oz weighed is "a cup. " Don't assume a cup (measuring cup) is "a cup" of tomatoes -- since they are diced small, many more fit into a measuring cup than if they weren't diced.

Usually in a sauce like when making Janevas spaghezzi sauce you can consider 1/2c a cup of veggies.

Also, remember, if it affects you, that tomatoes are a limited vegetable due to natural sugar content.
