I forgot that I did do a second attempt a few years ago but didn’t stick with it. Cleaning cabinets and found soup, drink, and cereal packets. Has use by date of 2017 & 2018. Do they really go bad?

I have used a few packets (dry) that were 5-6 months expired, and the did not taste great . But maybe it was just the kind of food it was! (But I don't remember which ones it was lol) But I still use mine upto 3 months past the expiry date!
