I’ve done pizza omelet in the past. I used several eggs, I added pizza seasoning or you can add oregano and basil into the egg. I topped it with a light smear of pizza sauce, sautéed green peppers, a bit of mushroom, a very small amount of ham, and about 1 tablespoon of shredded low fat mozzarella. It totally hit the spot. I know the mozzarella not on P1 protocol, but it took care of the craving.
