CHILI It's a great base to add to for amped flavor. Also to soften the beans! (I use HealthSmart unrestricted on Nashua. Note Proti Diet is now restricted. ) Chili Packet Recipe: I put the mix in a microwave dish with the water and let it sit for five mins, then cook it for 2 mins. While doing that, I sautee my veggies (mushrooms, zucchini, peppers, celery, etc). Then I add the chili mix into the pan and a little more water if too thick. I also add spices (cumin, chili powder, garlic powder, cayenne, etc) and some Chipotle Tabasco and let it simmer all together for another five mins or so. I like my chili a little sweet so I usually add some WF or no sugar added ketchup too! Sometimes I serve the whole thing over a bed of raw spinach or lettuce if I am extra hungry! Soooooo filling!

Last night I sautéed 2 bunches green onions, 1 large pkg mushrooms, calabaza squash, added water, 1 can fire roasted tomatoes, til tender then added tomato basil soup mix & simmered. Added a few ounces of chicken bc shared w my husband. Yummy.

I hate almost all of IP lunches so I only eat the other items they offer. Then I just pair them with veg. My favorite is the potato puree made into a pita and then filled with veg. (I prefer to save my meat for dinner) and the oatmeal or pancakes topped with the caramel fried "apples" from janeva's cookbook.

@napoleon Basically you add a little baking soda, spices and herbs to your taste and then fry it with some cooking spray in a small frying pan. Spoiler alert: it's not bread so the consistency is off and it's best hot so eat it quickly but it's a good enough approximation. (I highly recommend the cookbook. Very highly recommend. Its a complete lifesaver. )

Cauliflower rice pizza. Mix with potato puree and a touch of egg whites to bind. In oven for 30 mins. 350, then top with arugula, mushrooms, a course of grape tomatoes. Broil. Then add uncooked red onion or scallions. Delicious!

My go to for a quick lunch is salad with the cheese Doritos crushed. I add olive oil, sea salt, pepper and a tablespoon of salsa. It’s sooooo good! Look for a very low sugar salsa or make your own.

Chili over turnip fries. So good. Sandwich with made bread with the potatoes puree. So many choices
