Rutabaga fries. Spaghetti squash, asparagus, Brussel sprouts, these are all fantastic roasted! And spinach in a shake, you won’t even notice a change in the flavour.

@westing408 there is a recipe in the revised cookbook. but basically I cut the turnip into fry shape/size, season them, drizzle a tsp of oil on them, and then air fry them (can also be baked)

I like roasted brussel sprouts and spaghetti squash, and I use roasted eggplant as a dip for cracker made with the soups but watch the quantities on those. None of them are unlimited.

Roasted radishes! Can add to soup, or ear with other roasted veggies. Japanese eggplant, crunchy jicama.

You could try making hash browns or fries with jicama. I like an over easy egg on top of jicama hashbrowns.
